Flamingo Summer time Cookies

When J asked me to make biscuits to take to school as a thank you, I couldn't refuse... 2 days later, they were ready. It was really fun: 4 icing colours, simple shapes, great impact!

We had fun sketching them together. I've been sketching my biscuits for a while and although I'm far from being an artist, it helps me to narrow down what cookie cutters to use and what colours to mix.

The chocolate biscuit recipe can be found here

J and E were really proud to take them to school and nursery and the biscuits went down well with the staff. Brownie points all round! :p

Chocolate Biscuits Recipe - Recette des Biscuits au Chocolat

A few years ago, I went on a mad search for my ultimate chocolate recipe and I never got around to posting it... Let's change that: here it is!

Chocolate Biscuits (adapted from Lilaloa)

Ingredients for a generous batch:
250g butter (straight from the fridge)
250g caster sugar
1 tsp salt
2 eggs
1tsp vanilla extract
375g plain flour
60g cocoa powder (the nice baking kind, not the hot chocolate one!)

I try to prepare the dough several hours before baking (even the day before).

In a food processor, mix sugar, butter and salt.
Add the eggs and the vanilla. Mix until combined.

Sift flour and cocoa in a big bowl. Add the previous mixture and work with your hands trying to keep it crumbly (you don't want to knead the dough). When the flour is incorporated, press the dough into a ball and cut it in half.

Roll the dough to pencil thickness. I like to use cling film to sandwich the dough and dowels or pencils as guides for the rolling pin. Repeat for the other half. Chill in the fridge until firm (ideally several hours). The rolled dough freezes very well, just wrapped with more cling film or a very big freezer bag.

Cut the biscuits and dispose them on a prepared baking tray. Place it in the fridge while the oven is preheating at 180°C (it prevents the biscuits from spreading). Cooking time will vary depending on the size of the biscuits. For even baking, put similar sizes on the same tray. It's quite tricky to know when the biscuits are done so if you have the patience, bake a few and taste when cool to find what you like (it'll be worth it!). The unbaked shapes also freeze well.
Leave the biscuits on the tray for a few minutes before moving them on a rack to cool completely. Repeat the rolling, fridge, cutting, baking, cooling process.
Store the biscuits in an airtight container.

Ingrédients for une bonne fournée:
250g beurre (tout juste sorti du frigo)
250g sucre en poudre
1cc sel

1cc extrait de vanille
2 oeuf

375g farine

Orange and Cinnamon Biscuits Recipe - Recette des Biscuits Orange Cannelle

For some reason the pdf with the recipe doesn't link anymore so we'll have the recipe in a new post... I have tweaked it slightly to have less spread (I will also put the old quantities for those who would prefer the original recipe).

Orange and Cinnamon Biscuits (adapted from Cookie Craft)

Ingredients for a generous batch:
225g butter
200g caster sugar (225g old recipe)
zest of 2 oranges
1/2 tsp salt
1 egg
375g plain flour (390g old recipe)
1 Tbsp cinnamon

I try to prepare the dough several hours before baking (even the day before).

In a food processor, mix sugar, butter, orange zest and salt.
Add the egg. Mix until combined.

Sift flour and cinnamon in a big bowl.

Cut and bake the biscuits at 180°C. Cooking time will vary depending on the size of the biscuits. For even baking, put similar sizes on the same tray. They are done when the edges start to colour.

225g beurre
200g sucre en poudre (225g pour l'ancienne recette)
zeste de 2 oranges
1/2cc sel
1 oeuf
375g farine (390g pour l'ancienne recette)
1CS cannelle

After tasting the Pumpkin Spice Biscuits, I couldn't wait to make them again with apples. Here there are! The dough was a bit softer (I think the compote wasn't thick enough) but I decided not to add extra flour and as you can see, they were fine anyway.
I also have a confession to make... I really, really wanted to add toffee bits (like Mike from Semi Sweet Designs did). I tried, really: straight from the fridge, frozen, put on top... but every time the toffee melted and the biscuits looked like a mess. I read many blog posts and forum entries and it seems some brands are better than others, but I don't have any other options here. So time for plan B... if the toffee can't go in the biscuits, it will go in between TWO biscuits (see notes bellow).

Apple Spice Biscuits - adapted from Glorious Treats and Semi Sweet Designs

Ingredients for a generous batch:
250g butter
100g dark brown sugar
100g caster sugar
1/2tsp salt
1 egg
1tsp vanilla
60g homemade apple compote or apple-quince compote (unsweetened and cooked as thick as possible)
about 410g plain flour (depending on the compote consistency)
1tsp cinnamon
1tsp mixed spice

I try to prepare the dough several hours before baking (even the day before).

In a food processor, mix sugars, salt and butter.
Add egg, vanilla and compote. Mix until combined.

Sift flour and spices in a big bowl.

Cut and bake the biscuits at 180°C. Cooking time will vary depending on the size of the biscuits. For even baking, put similar sizes on the same tray. They are done when the edges start to colour. The unbaked shapes also freeze well.
Leave the biscuits on the tray for a few minutes before moving them on a rack to cool completely. Repeat the rolling, fridge, cutting, baking, cooling process.
Store the biscuits in an airtight container.

Notes for the sandwich biscuits:
Roll the dough thinner: I used bamboo skewers as guides
Bake them separately as they will bake quicker than the thicker ones
When the biscuits are cool, spread a thin layer of caramel or dulce de leche on the base biscuit.

Now I need to make a cake (or cupcakes) with cream cheese frosting just so I can sprinkle some crunchy toffee bits on top...
_______________________________________________

Ingrédients for une bonne fournée:
250g beurre

After last year's experiment (here), I was keen to have another go at those autumnal treats. Here is the mash up recipe.

Pumpkin Spice Biscuits - adapted from Glorious Treats and Semi Sweet Designs

Ingredients for a generous batch:
250g butter
100g dark brown sugar
100g caster sugar
1/2tsp salt
1 egg
1tsp vanilla
60g pumpkin purée (I actually used some butternut squash, no seasoning, cooked down to get rid of as much water as possible)
about 410g plain flour (depending on the pumpkin purée)
2 tsp pumpkin spice mix (see note if you'd like to make your own) or 2tsp mixed spice

I try to prepare the dough several hours before baking (even the day before).

In a food processor, mix sugars, salt and butter.
Add egg, vanilla and pumpkin purée. Mix until combined.

Sift flour and spices in a big bowl.

Note: Pumpkin Spice Mix (I can't remember where I found the proportions, let me know if you do so I can add a link)

1 1/2 Tbsp cinnamon
1 tsp ginger
1 tsp nutmeg
3/4 tsp allspice
3/4 tsp cloves

Question/Thoughts:
Could this work with thick, unsweetened apple compote? You know where this is going, right? ;o)

1 1/2 cs cannelle
1 cc gingembre
1 cc noix de muscade
3/4 cc poivre de la Jamaïque
3/4 cc clous de girofle

Question/Avis:

Gingerbread Biscuits Recipe - Recette des Biscuits Pain d'épices

2016 was the year of gingerbread in my kitchen. I can't even remember how many tins of black treacle and golden syrup I've bought in the last few weeks!

Here is the final recipe, one that should please everyone. For more informations on the recipes I tried, see this post.

Gingerbread Biscuits, adapted from Haniela's (original recipe here)

In a large pan, melt:
170g butter
150g dark brown sugar
1/2 cup black treacle
1/4 cup golden syrup
1tsp salt
3tsp cinnamon
3tsp ginger
1/2tsp cloves
1/2tsp nutmeg
1/4tsp white pepper

When lukewarm, add:
1 egg

Add all at once:
540g-560g flour
1/2tsp baking soda
1/2tsp baking powder

The dough will be very soft (it seems like it's too soft but it's because of the melted butter. It will firm up when left in the fridge). Roll to pencil thickness between two sheets of clingfilm and refrigerate for several hours, ideally overnight: the flavours will have more time to develop.
Cut out the shapes and place back in the fridge while the oven is preheating (180°C fan). If you bake them straight away, they could rise or spread too much. Baking time is tricky: they feel soft when they come out of the oven but will go really hard when they cool down. I would suggest trying a small batch, taking them out of the oven a  minute or two apart, letting them cool down and tasting them to find what you like best (yes, it's not overly fun but much better than having 50 biscuits that are only good for dunking! Ask me how I know... :p )

Gingerbread Biscuits Trial

I've been searching for "my" gingerbread recipe for years... No more... I put 5 recipes to the test and dispatched to grateful testers :p

MS: Martha Stewart recipe here
BB: The Bearfoot Baker recipe here
H: Haniela recipe here
PP: Peggy Porschen, found on Cake Central forum recipe here
SS: Sweet Sugarbelle recipe here

Oh boy, were the results confusing! I have to say that the results I got have to do with the ingredients found in the UK (no molasses, different flour, butter, sugar, egg size?), the fact I weigh and not use cups, my method of rolling etc... so it doesn't mean that a recipe is "better" than another, but just what happened when I baked them. In all the recipes, I replaced the molasses by a 50-50 mix of golden syrup and black treacle.

MS: my favourite, deep flavours, almost savoury but some people didn't like it at all
BB: ok for most testers
H: clear favourite, good texture and spices
PP: very very spicy and very hard, probably excellent for building gingerbread houses (having said that, a few people had it as their favourite)
SS: another clear favourite, deep flavour of treacle but granulated sugar made it grainy, which I didn't like at all

So... I like to bake for others, to take to work or the boys' school/nursery so I need a crowd pleaser. Sorry MS but it can't be you! I decided to go for H as I liked the texture and change the ratio of my molasses' replacement to increase the black treacle. A bit of maths to match the amount of treacle I put in SS and Ta dah! Search over... for now!  ;o)
Post with the final recipe here.

DIY Cookie Cutter - Recycle

I have several boxes of cutters and yet, I keep wanting needing more... There are so many fabulous designs out there, but I have two issues when buying cutters:

1- the size - a lot of companies make very big cutters. I'm making biscuits to eat, for me it's not a media to display my artistic talent (I wish... :p ). Many will be devoured by my little ones and somehow they always find the biggest biscuits in the tin! Also if I want a specific design, it needs to match the size of the cutters I've already got.

2- the price - once I've added the shipping costs to the uk, ordering one or two cutters doesn't seem worth it.

There are tutorials out there on diy cutters involving buying strips of aluminium etc but I'm concerned about the join... double sided tape or glue just don't seem "right"!
So what's a girl to do?
Recycle!

I have a box of metal cutters that I know I'm never going to use: too big, unknown shape (you know the ones you keep turning round and round and you still don't know what they are supposed to be...), duplicates (how many circles/eggs/hearts/stars do you need?).

I usually start with a template and measure the perimeter to find the closest match in my box. After that, all I need is a pair of pliers! The trick is to be really careful where the join is, leaving that area in a similar shape if possible.

And this is what the leaf cutters looked like before I attacked them with the pliers:

Autumn Biscuits

After Jess and Eddie's biscuits, I had enough icing leftover so I decided to go all out and make some autumn biscuits. I wanted to try a different recipe: an american inspired pumpkin spice biscuit. I tried two with pumpkin purée (from GloriousTreats and Sweetopia) and one without (from SemiSweetDesigns). The biscuits were distributed to willing guinea pigs and they prefered the recipes with pumpkin. Surprisingly the three batches held their shape beautifully.

Edited Nov 2017: recipe here

One thing I learnt though: old icing, NO NO... it doesn't dry well, yuk yuk!

I had a good look on Google and Pinterest for some of the designs (especially the squirrel and the hedgehog). I decided to improvise on the textures to try to improve the finished look of my icing and I think the furry/spiky effect is not bad at all.

I think I need a mini apple cookie cutter now... the acorn is so cute!

And to finish off... the Tour de force... I managed to pipe some writing on a biscuit! ok, that's not totally true... I worked out how to transfer an image or writing on a biscuit so I can then pipe on top of that! Magic! There will be a separate post for that.

Wedding Biscuits - Jess and Eddie

I am so pleased with how these turned out! Orange and cinnamon biscuits and 4 colours of royal icing.
Je suis vraiment contente des ces biscuits! Biscuits orange cannelle et 4 couleurs de glaçage.

They took three days from start to finish but nothing difficult. I am slowly figuring out how to get organised with the icing, from colouring and putting in piping bags to then thickening and changing tips for final touches.

I am also enjoying the planning stage more and more. Some big, small, simple, intricate, partly covered, same cutter several designs, same design several colours... It really pays off in the end!

Strawberries and Shortbreads

The first strawberries from the garden... Unfortunately, we have a week of rain forecast and the birds are not helping, so I picked all the fruits I could. I still remember my great grandma preparing those, because the supermarket strawberries were nowhere near good enough! I've left out the mountain of sugar though...

Marinated strawberries: sliced strawberries, orange zest, very thinly chopped mint (I use scissors so it doesn't go black), and orange juice. Cover and leave in the fridge for a few hours, stiring a couple of times.

Shortbreads: basic recipe, 100g sugar (I use 50-50 golden caster sugar and granulated), 200g butter, 300 flour. Dough rolled 5mm thick, sprinkle some granulated sugar before baking.

I served it with plain greek yoghurt.

Happy Valentine's Day!

Difficult to resist those smiley faces! (set of cutters from Lakeland)
I used bamboo skewers to roll the dough and sandwiched them with jam. Actually, most of the work was done by J... I was told to leave him alone was he was working!

Christmas 2015- Round 3

I forgot those were in the freezer so I decorated them quickly today with leftover icing...

J'avais oublié qu'il me restait quelques biscuits au congélo donc je les ai décorés aujourd'hui avec du glaçage qu'il me restait...

Christmas 2015 - Round 2

More pinguins! After I made my little trio, I saw that post from Lisa, the Bearfoot Baker. There were a few things I wanted to try again so a few pinguins (with hats of course!) jumped on the baking tray...
I used the teddy bear cutter again and added the top part of a hat (a bell cutter could work too, giving more of a beany shape). I also used her tip and added white non pareils to the eyes.

And J had a little sticker with a pinguin and a stack of presents that I wanted to have a go at... an egg cutter was the perfect shape. Now, snow or no snow?

Another look at the little pinguin! :o)

Allez, on regarde encore le petit pingouin! :o)
