I had another go at making Michel Roux's brioche. You can find the link to the recipe here with my last attempt. I decided to do the whole amount this time and divide it into 3 (about 400g each).
2 braids (1 for the freezer)
6 small brioches

2 briohes tressées (1 au congelo)

To braid, I started halfway and did a standard braid, then rotated the whole thing (a silicon mat is useful) and did an inverted braid on the other half.
J'ai commencé à tresser au milieu, puis j'ai tourné la plaque pour faire une tresse inversée sur l'autre moitié.
Ta da! Miam!
